Jennifer,
I know that you keep things simple for meals and was curious what a typical week or month menu looks like at your home.

Breakfast...
We usually start the early morning off with raw fruit and kefir smoothies. After chores are done, we have either whole grain porridge (oats, millet, 7-grain) or eggs and toasted bread with butter and honey. If I am feeling sluggish, I limit myself to only raw fruits until lunch time.
Lunch...
We have eggs or pancakes a lot in the winter. We also do left over soup and sandwiches (pink salmon, chicken, egg salad, or ground venison sloppy joes). I fix myself wraps with guacamole, sprouts, and cheese on whole wheat flat bread. I could live on them, honestly!
Dinner...
Soups are a regular on the menu. Bean soup, potato soup, vegetable soup, chicken soup and chili are common. Millet is great to use in soups because it bulks things up and allows you to cut down on or eliminate meat. We roast a chicken two or three times per month and we also eat venison once each week. We do vegetarian lasagna with whole grain noodles and spaghetti. I make whole grain pilaf, couscous, and brown rice dishes. I occasionally make just roasted root vegetables served with real butter and sour cream. I always try to serve a large salad and a loaf of bread.
Snacks...
bread & butter, fruits (apples, bananas, oranges), eggs (we eat lots of eggs!), bowl of oatmeal, granola, stove popped popcorn, green salad, sliced carrots

As you can see, I don't get too fancy. We live on a tight budget. Once the garden begins to produce, we eat mainly vegetable dishes. I will try to add more specific recipes and ideas for you when I have time.

Our weekly dinner menu changes a lot, but the rest is pretty much the same. We eat as close to the Nourishing Traditions guidelines as possible, but it's far from 100%. If nothing else I make sure we get some cultured foods and good quality fats and veggies.

Breakfasts: soaked oatmeal with cinnamon, coconut oil and honey, soaked and baked oatmeal (very yummy) served with raw honey and homemade yogurt, leftover cooked brown rice with dried fruit, sweetener and cinnamon and butter, scrambled or fried eggs in coconut oil, homemade toasted bread, non-soaked pancakes made with kefir-wow these are awesome!- or the soaked pancakes if I remember. I used to buy turkey ham and bacon for dh, but I've cut way back and serve it maybe twice a week. Breakfast burritos are quite popular too. I generally eat half a pink grapefruit before anything else-trying to lose weight. My two year old isn't interested in breakfast unless it's a banana or meat! How do I get her to eat oatmeal again? Kefir smoothies several times a week.

Occasionally I will make granola and we eat it with the yogurt and some fresh fruit- it is so yummy, but eating a lot of it makes my gut hurt. If I make it I will eat it, so I don't make it often.

Lunches- tuna or egg salad with crackers or in a sandwiche, apple slices, carrot sticks, canned fruit or veggies, hot dogs (gasp!) cheese slices, leftover soup and grilled cheese sandwiches, peanut butter sandwiches...sometimes we eat junkier stuff depending on what is going on or where we are.

Dinner- I try to have some meatless meals, but dh really likes meat and so do I. (maybe that's where the baby gets it) We like soups too, so I will usually make a vegetarian soup like French onion, potato leek, minestrone etc. and serve with a big salad and some homemade bread. I cook some type of legume each week served with brown rice, salad or steamed veggies and a type of bread. I am learning how to stretch things- Monday I had some leg of lamb bones and a little of the meat. So I put them in my stock pot with water and some herbs and let it simmer for several hours. I chopped up the meat and added leftover roasted veggies, frozen green beans and peas, millet and brown rice and seasonings. Pretty yummy. So far this has been our menu for the week:
Monday was the lamb soup, big salad
Tuesday- chili(1.25 lbs meat) with kidney beans and macaroni, cole slaw, homemade apple strudel (excellent-not very sweet, only used a few sheets of leftover phyllo dough and the rest was the tart apple filling)
Wednesday-bake eggplant dish, salad, homemade French bread
Thursday-white bean chicken-sausage casserole, rest of salad, sourdough bread
Friday- homemade garden ranch pizza(uses sweet bell peppers, fresh spinach, tomatoes etc. with Ranch seasoning and cheese) salad, homemade dessert (wanting to try Panna cotta with berries)
Saturday-probably some grilled chicken and potato salad
Sunday-leftovers!!

We do drink tea and decaf coffee moderately and my children drink the raw goat milk, homemade herbal teas with honey and diluted juice. It goes without saying that we drink water too :)
