Terrific Zucchini!

Dear Friends, Have you heard the saying, "Zuchinni terrific! Like Bunnies, prolific!"? How true, how true! But, what a blessing they are to the home gardener. We eat summer squash nearly every night for supper during July and August. We eat so many yellow crooknecks and green zucchini that by September, we can hardly look at them. But, by the next summer, we are craving them again! This little newsletter is for those of you fellow kitchen gardeners out there who are looking for ideas on what to do with your abundant supply of zucchini. Fo starters, you can freeze them. Just slice them into thick slices and blanch them ever so lightly in boiling water. Dry them off well and pack them into freezer bags. They taste great added to stews and casseroles in the winter. A delicious, easy, and cheap meal is to chop or dice them with a large onion and add them to an egg and cheese omelet. This can be served for breakfast, lunch, or dinner. You can also dice them up and add them to pasta salad or macaroni salad. Have you tried frying them? Coat them in a mixture of flour, cornmeal, salt, pepper, and herbs. Lightly fry them in a hot coconut oil. You may also chop them up and sautee them alone in coconut or palm oil with lots of chopped herbs and seasoning salt. Don't forget to add them to quick breads and muffins! Everyone has a Zucchini Bread recipe! Enjoy the fresh produce that summer offers us! If you didn't plant a kitchen garden this year, start planning for next year. For now, though, hit the farmer's markets and roadside stands! Do you have neighbors who garden?
