Homemade Cookies & Cocoa

Dear Friends, 
 
Oreo cookies and Swiss Miss cocoa...sounds good to you, 
does it not? But, have you ever read the labels on some of 
these sweet treats? It can be a bit scary when you really 
start considering just what you are putting into your body, 
not to mention the little bodies of your children. 
Wouldn't it be so much nicer if you took a bit of time 
today to bake up a special treat for your family? An hour 
or so is all that is needed. And, aren't they worth it? 
 
Almond Shortbread Cookies 
2 C butter 
1 C honey 
1 tsp almond extract 
4 C whole wheat pastry flour, fresh ground 
1/4 tsp sea salt 
whole almonds 
Cream together the butter, honey, salt, and extract. Begin 
to mix in the flour with a beater. When it becomes too 
thick, stir in the remaining flour with a wooden spoon.  
Roll the dough into a log and wrap with wax paper. It can 
be a bit sticky, but do the best you can. Refrigerate this 
dough for 3 to 4 hours. Cut off rounds and press an almond 
into the top of each cookie. Bake in a pre-heated 300 
degree oven for 25 minutes. 
 
Hot Cocoa 
4 cups milk 
4 TB dark organic cocoa powder 
Pure maple syrup to taste 
Warm milk in a saucepan and mix in the cocoa powder.  
Drizzle in maple syrup until it tastes sweet enough for 
you. Top this with a dollup of real, whipped cream and 
sprinkle with some grated nutmeg or cinnamon!  
 
Now, what store bought product can top this special treat?  
It makes you want to curl up in front of a big, roaring 
fire with a warm blanket and a copy of "The Long Winter", 
by Laura Ingalls Wilder. Or, why not gather the children 
around the dining room table or toss a blanket and some 
pillows on the floor and spread out the Scrabble game 
board. Pop some popcorn and make a special fruit punch...
